A culinary journey that promises a symphony of delectable flavours in every bite awaits you as you prepare to fill your kitchen with the enticing aroma of lemon.
Ingredients for Lemon Rice:
1 cup of Basmati rice (or any long-grain rice)
 Water: 2 cups (for cooking rice)
 tablespoons of cooking oil (such as vegetable or canola oil)
teaspoon of mustard seeds
Lemon Juice: 2-3 tablespoons (adjust to taste)
Mustard Seeds: 1 teaspoon
Urad Dal (Split Black Gram): 1 teaspoon
Chana Dal (Split Chickpeas): 1 teaspoon
2-3 green chilies, slit lengthwise (adjust according to your spice preference)
8-10 curry leaves
1/4 teaspoon of turmeric powder
1/2 teaspoon of salt (adjust according to taste)
Asafoetida (Hing): a pinch
Freshly chopped Coriander Leaves: for garnish
Vegetable Oil: 2 tablespoons
Method for making Lemon Rice:
Cook the rice: Rinse the rice with water until the water runs clear to remove excess starch. In a pot, add 2 cups of water and bring it to a boil. Add the rinsed rice and cook it until it is 90% done. Drain the water and let the rice cool down.
Tempering: Heat oil in a large pan or wok over medium heat. Add mustard seeds and let them splutter. Then, add chana dal and urad dal. Sauté until they turn golden brown. Next, add curry leaves and green chilies. Sauté for a minute.
Flavours and spices: Sprinkle turmeric powder and salt over the tempering. Mix well and cook for another minute to toast the spices.
Rice and lemon: Add the cooled rice to the pan and gently mix it with the tempering, ensuring all the rice grains are coated with the spices. Squeeze fresh lemon juice over the rice and stir well. Adjust the amount of lemon juice according to your taste preference.
Optional additions: If desired, add roasted peanuts to the rice for some extra crunch and flavour. Mix them well with the rice.
Garnish and serve: Turn off the heat and garnish the lemon rice with fresh coriander leaves. Cover the pan and let the rice sit for a few minutes to allow the flavours to meld together. Serve it hot as a standalone dish or as a side with your favourite curry or chutney.
